Al Babaloo's Tasty Breasts
Serves 22 chicken breasts, boneless, skinless
1 large white onion - sliced into rings
Peas - frozen or fresh (enough for two)
2 tbsp mango chutney (recipe here)
2 tbsp soy sauce
1-2 tbsp curry powder (Madras)
150ml/5fl.oz single cream
Cooking method:
Layer sliced onions in the bottom of a baking dish
Season onions with ground black pepper
Lay chicken breasts on top of onions
Sprinkle peas around the chicken
Mix together cream, curry powder and soy sauce in a bowl then pour over chicken
Dollop 1 tbsp of mango chutney on each breast
Cover and cook in oven at 190c/375f/gas 5 for 30 mins
Serve with plain rice
